That way you focus only on how it feels in your hand: is it comfortable, do you feel that you have control? PLEASE NOTE: The steel blade is not stainless and if left wet (or in a high humidity environment) it will rust (take on a unique patina). If you are going to store this knife for a prolonged period you will want to wipe the blade with oil to protect it. In addition, highly acidic foods, such as tomatoes or lemons, will cause the blade to discolor. This is harmless. An added benefit of the 52100 steel is that this knife will remain sharp for months at a time without ever requiring a whetstone.
